Preparation

Pour 600 ml of water into a large bowl (the remaining 100 ml will come in later).

Pour 3/4 of the rest of the flour, until we get a sticky dough over which we add salt, then the remaining 100 ml of water and, finally, after we have kneaded well, we add the rest of the flour.

Dough the dough on the work table greased with oil and knead for approx. Ten minutes. DO NOT put flour on the table! It will completely change the formula of the dough and we don't want that!

Choose a large oven tray (with higher walls), which you grease with a little oil. Turn the bread dough into it and level it in a flat rectangle. After you have spread it well, fold the dough, bringing the left and right ends over the middle. Repeat this maneuver several times (5-6 times): we get a small square, we stretch well again, and we bring the ends in the center, obtaining a square, and we stretch the same way.

Finally, put the tray completely in a large plastic bag and leave the dough to rise for 1 hour at room temperature.

After an hour, the bread dough rose. Grease your palms with oil and start stretching and folding it again, then leave it to rise for another 30 minutes.

Step 7

Preheat the oven to 250 degrees C for 30 minutes, without ventilation. On the lowest rail put a tray / cauldron with 3-4 fingers of warm water. It will have to boil and generate steam when we bake the bread.

After the second leavening, turn the bread dough over on the lightly greased work table and start to shape it, turning the heads brought in the middle upside down and obtaining a round and dense bread, which you cut with a knife ( about 1 cm deep).

Gluten-free white bread
