Add rice, water and bay leaf to medium saucepan. Bring to a boil. Reduce to a simmer and cover. Cook for 15 minutes or until water has absorbed.

- If you want to make this Chipotle™ cilantro lime rice with brown instead of white rice, you’ll need to increase the cook time per the package directions on your brown rice. Generally brown rice cooks for twice as long as white rice, or until all the water is absorbed.
- Use this rice as a base for your favorite protein bowl or rice-filled burrito, or serve as a side dish.
- Washing your rice it is a great way to keep it from getting too gummy as it cooks. Simply rinse in cold water in a sieve for a few seconds before adding to your pot.
- It’s important that rice isn’t disturbed while it’s cooking. As tempting as it is to lift the lid and give it a stir, all that trapped steam is what makes the rice tender, fluffy and soft—so be patient!
