Add rice, water and bay leaf to medium saucepan. Bring to a boil. Reduce to a simmer and cover. Cook for 15 minutes or until water has absorbed.

Remove from heat and let sit, covered, for 5 minutes.

Remove bay leaf from rice and discard. Stir in cilantro, lime juice, olive oil and salt.

- If you want to make this Chipotle™ cilantro lime rice with brown instead of white rice, you’ll need to increase the cook time per the package directions on your brown rice. Generally brown rice cooks for twice as long as white rice, or until all the water is absorbed.

- Washing your rice it is a great way to keep it from getting too gummy as it cooks. Simply rinse in cold water in a sieve for a few seconds before adding to your pot.
