The beans are put in water in the evening. Boil in 2-3 waters, which are discarded. (Or you can skip this step if you use canned beans - for those in a hurry ... or stinky - like me: p). Boil the ciolan for about 20 minutes, then debone.

Beans with smoked ciolan / traditional family recipe

This recipe for beans with smoked ciolan, reminds me of my childhood, when my father "put" a bean as he said. And it was the tastiest ciolan bean we ate at the time. He was so skilled in the kitchen that I sit and wonder where I inherit this passion :)))
When my father was in the kitchen, any dish, as ordinary as it was, took shape, he knew how to cook anything, he didn't go into desserts, but he cooked any dish, he made sausages and preserves of all kinds.
I remember the story of this bean stew, which he prepared with so much love, patience and last but not least taste! The recipe was adapted to the kitchen at home, but originally it was prepared in a cauldron, over low heat, managing to drive the neighbors crazy with the smell.

Ingredients with smoked beans / traditional family recipe:

  • 500 g dry beans with medium grain
  • A smoked hamster up to a kilogram
  • 2-3 onions
  • 1 carrot
  • 1 parsnip root
  • 1 parsley root
  • 1 capsicum
  • 2-3 cloves of garlic
  • 100 ml of sunflower oil
  • 1 bunch of dill
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme or half dry
  • Salt and pepper to taste

How to prepare beans with smoked ciolan / traditional family recipe:

Let the beans soak overnight.

The next day, we change the water and boil it in a large pot of cold water.

At the first boil we change the water, but this time with boiling water and put it back to the iron over a low heat, next to the ciolan.

We clean the vegetables, finely chop the onion, pepper and garlic, slice the vegetables and put them to harden in sunflower oil with low heat for 20 minutes.

After the ciolan has boiled, take it out and cut it into larger slices or pieces, then put it back with the vegetables, tomato paste, thyme, pepper and finely chopped dill in beans, continue to boil until the sauce binds.

Add the sliced ​​ciolan or larger pieces, continue to cook for another 10 minutes on low heat to combine the tastes.

Serve with a salad of cabbage, pickles or pickles.

Ingredients for the 10 liter pot:
Beans 500 g
Smoked ciolan 750 g
Smoked ribs 400g
Onions 2 pcs
Large carrots 2 pcs
Parsley root 2 pcs
Medium celery 1/2 pcs
Red bell pepper 1 pc
Yellow bell pepper 1 pc
Garlic 4 puppies
Tomato puree (broth) 400 ml
Bay leaves 4-5 pcs
Dried tarragon 3 tbsp
Thyme 2 twigs

Moisturize the beans for at least 12 hours in cold water.

Rinse the beans and then boil in cold water in a pot.

When it boils, remove from the heat, drain the beans using a sieve under a stream of cold water. Repeat the procedure 2 times.
Put the beans in the pot for the third time and pour 6 liters of cold water on top.
Collect foam from the surface if it forms.

Add the smoked ciolan, the smoked rib and the bay leaves.

Cover with a lid and cook for an hour. Remove the meat from the juice and let it cool a bit so you can debone and cut it.

When the meat has cooled a little, cut it into suitable cubes.

Put the pieces of meat back in the water and then add the onion, celery, parsnip and carrot all cut into small cubes. Add tarragon and dried thyme. Stir and put the lid on. Boil for 20 minutes.

Add the red and yellow peppers cut into small cubes. Boil for another 15 minutes.

Add the tomato juice and crushed garlic.

Boil for another 7 minutes. Turn off the heat and add salt and ground pepper.

Add dried tarragon and finely chopped parsley. Put the lid on and let it infuse for 10 minutes.

After 10 minutes take the lid and stir in the pot a few times.

Serve hot soup with vinegar, bread and hot peppers.
Consume in moderation!
