Peel and finely chop the onion and garlic. Temper the onion and garlic in olive oil, then add the lentils cleaned of any impurities and 500 ml of water. For those who do not prefer frying, add water from the beginning. Bring to the boil, reduce the heat and leave for 15 minutes.

In the meantime, we take care of the mushrooms, we wash them right before we use them - if we wash them long before they will turn yellow and cut them into quarters. In a pan add the mushrooms and sprinkle with a little olive oil. Put the pan on the fire and lightly brown the mushrooms. Add diced tomatoes over the mushrooms - if you use cherry tomatoes, they will only be cut in half. The basil is washed, finely chopped and added to the tomatoes. Keep the pan for 2-3 minutes on the fire to blend the flavors and keep warm until serving.

Season the lentils with balsamic vinegar, salt, ground black pepper and smoked paprika. When serving, put the lentils on plates and add the mushroom and tomato mixture on top. Add some more paprika powder and serve.
