I cut the cleaned mushrooms into large cubes. I also left the tails to fry. I sectioned the muscle lengthwise, without cutting it to the end, then I used a twister and I pressed it lightly to stretch it. I seasoned the muscle with salt, pepper, paprika and thyme, then I put the mushrooms and grated cheese.

I rolled the meat long and tied it with a string, but you can also use other special devices. In 5 minutes I put the pork tenderloin roll with mushrooms next to the potatoes.

I continued cooking at 180 ° C For other 20 minutes. If the muscle is smaller, it will be ready in 17 minutes.

When the time was up I took out the potatoes and the nicely browned steak and I removed the string with which I tied the meat.

I put the potatoes and the steak on a plate, I cut the first slice just to show you how tender the meat is and how good the mushrooms look.

The meat is slightly pink, not too cooked, but not in the blood, juicy and very tasty.

I washed the muscle a little. I cut it lightly so that I could undo it as much as possible, I beat it like for snails.

In the middle, along, I put 2 cleaned carrots, green onions, 2 hard boiled eggs cut along, slices of cheese and sprinkled salt and pepper.

I rolled the muscle, I fixed everything with toothpicks.

I put the roll in the tray with water and seasoned a little on top with all kinds of greens and natural spices.

1. Wash the meat, let it drain, then cut it lengthwise so as to obtain a slice of meat that can be rolled. Beat the schnitzels a little with a hammer, then season and set aside. Beat the eggs, add the grated cheese, then salt, pepper and fry in a little oil, just like an omelet. Separately, mix the mushrooms with the garlic and fry in a little oil over low heat. Heat the oven.

2. Place the slices of smoked ham, omelette and mushrooms evenly on the slice of meat, then roll and tie with a spiral string. Place in a pan with a little oil. Sprinkle with salt, pepper, rosemary, grease with oil and sprinkle with white wine.

3. Put in the oven and bake for about an hour, and before it is ready, cut the string and remove. Cut into slices and serve hot, garnished with mushrooms and green parsley.
